THE VINEYARD
Situated in the foothill of the Pyrenees mountains and irrigated by the melting mountain waters, the vineyards settle on brown limestone soils with sandy loam texture. Merlot and Syrah are grown in the area of Estadilla and Tempranillo in the area of Olvena (both regions are in Aragon, Northeastern Spain). The grape vines are pruned while still green and the grape clusters are manually thinned to improve production of the grapes and to obtain the most brilliant fruit for the posterior winemaking.
WINEMAKING
The grapes harvesting time is determined by grapes tasting and must analytical control. The grapes then ferment in stainless steel tanks. After the maceration, the pressed grapes and skins are separated from the free-run wine. The free-run wine undergoes malolactic fermentation and rests in oak barrels for 6 months. The wine remains again in stainless steel tanks until finally bottled.
TASTING NOTES
The nose and palate are greeted by intense black fruit and spicy hues, combined with toasted compounds added by the oak tree. It relishes full-bodied texture, which leaves long and elegant aftertaste.
